Zucchini Rolls Recipe

Ingredients:

  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Olive oil, for grilling

Instructions:

  1. Preheat a grill or grill pan over medium heat.
  2. Using a mandoline or a sharp knife, slice the zucchinis lengthwise into thin strips, about 1/8-inch thick.
  3. Lightly brush each zucchini strip with olive oil and season with salt and pepper.
  4. Grill the zucchini strips for about 1-2 minutes per side, until softened and grill marks appear. Set aside to cool.
  5. In a medium bowl, combine the ricotta cheese, Parmesan cheese, mozzarella cheese, chopped basil, parsley, minced garlic, salt, and pepper. Mix well.
  6. Lay a grilled zucchini strip flat on a clean surface. Spoon about 1 tablespoon of the cheese mixture onto one end of the strip and roll it up gently.
  7. Repeat with the remaining zucchini strips and filling.
  8. Arrange the zucchini rolls on a serving plate and garnish with extra chopped herbs if desired.
