Ingredients:
- 2 medium zucchinis
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese

- 1 tablespoon fresh parsley, chopped
- 1 clove garlic, minced
- Salt and pepper, to taste
- Olive oil, for grilling
Instructions:
- Preheat a grill or grill pan over medium heat.
- Using a mandoline or a sharp knife, slice the zucchinis lengthwise into thin strips, about 1/8-inch thick.
- Lightly brush each zucchini strip with olive oil and season with salt and pepper.
- Grill the zucchini strips for about 1-2 minutes per side, until softened and grill marks appear. Set aside to cool.
