Zucchini Patties


These crispy, flavorful zucchini patties are a great way to use up fresh zucchinis. Packed with veggies, herbs, and a touch of cheese, they’re perfect as a snack, side dish, or even as a vegetarian main course.

Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup breadcrumbs (or panko for extra crunch)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Prepare the Zucchini:
    Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towel and squeeze out the excess moisture.
  2. Mix Ingredients:
    In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
  3. Form Patties:
    Take a small amount of the zucchini mixture and form it into small patties, about 2-3 inches in diameter. Repeat until all the mixture is used.
  4. Cook the Patties:
    Heat a little olive oil in a skillet over medium heat. Once hot, add the patties and cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Serve:
    Remove from the skillet and place on a paper towel-lined plate to drain any excess oil. Serve warm as a snack, side dish, or with a dipping sauce of your choice.
