Zucchini Patties – Better Than Meat!

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup finely chopped onion
  • 1/2 cup grated parmesan cheese (or your favorite cheese)
  • 1/2 cup breadcrumbs (or panko)
  • 2 eggs, lightly beaten
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • Olive oil, for frying

Instructions

  1. Prepare the zucchini:
    Grate the zucchinis and place them in a colander. Sprinkle with salt, mix, and let sit for about 10 minutes to draw out excess water. Then squeeze the zucchini using a clean kitchen towel or cheesecloth to remove as much moisture as possible.
  2. Make the batter:
    In a large bowl, combine the squeezed zucchini, chopped onion, parmesan cheese, breadcrumbs, eggs, minced garlic, black pepper, and parsley. Mix well until everything is evenly combined.
  3. Shape the patties:
    Scoop about 2 tablespoons of the mixture and shape into small patties. Repeat with the remaining mixture.
  4. Cook:
    Heat a few tablespoons of olive oil in a large skillet over medium heat. Place patties in the skillet, leaving space between them. Fry for about 3–4 minutes per side, or until golden brown and crispy.
  5. Drain and serve:
    Transfer the cooked patties to a plate lined with paper towels to remove excess oil. Serve warm with your favorite dipping sauce or enjoy them plain!
