- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup finely chopped onion
- 1/2 cup grated parmesan cheese (or your favorite cheese)
- 1/2 cup breadcrumbs (or panko)

- 1/4 teaspoon black pepper

Instructions
- Prepare the zucchini:
Grate the zucchinis and place them in a colander. Sprinkle with salt, mix, and let sit for about 10 minutes to draw out excess water. Then squeeze the zucchini using a clean kitchen towel or cheesecloth to remove as much moisture as possible. - Make the batter:
In a large bowl, combine the squeezed zucchini, chopped onion, parmesan cheese, breadcrumbs, eggs, minced garlic, black pepper, and parsley. Mix well until everything is evenly combined. - Shape the patties:
Scoop about 2 tablespoons of the mixture and shape into small patties. Repeat with the remaining mixture. - Cook:
Heat a few tablespoons of olive oil in a large skillet over medium heat. Place patties in the skillet, leaving space between them. Fry for about 3–4 minutes per side, or until golden brown and crispy. - Drain and serve:
Transfer the cooked patties to a plate lined with paper towels to remove excess oil. Serve warm with your favorite dipping sauce or enjoy them plain!
