Zucchini is Tastier than Meat! Healthy and Incredibly Delicious

Ingredients

  • 2 medium zucchinis
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 1/2 cup breadcrumbs (or almond flour for gluten-free)
  • 2 eggs (or flax eggs for vegan)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 tsp smoked paprika (optional)
  • Fresh herbs (parsley or dill), chopped, for garnish

Instructions

  1. Wash the zucchinis, trim the ends, and grate them using a box grater.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine the zucchini, chopped onion, minced garlic, Parmesan, breadcrumbs, and eggs. Season with salt, pepper, and smoked paprika if using. Mix well until the mixture holds together.
  4. Heat olive oil in a large non-stick skillet over medium heat.
  5. Scoop about 2 tablespoons of the mixture and form into patties or fritters.
  6. Cook the patties for about 3–4 minutes on each side or until golden brown and cooked through.
  7. Remove and drain on paper towels. Repeat with the remaining mixture.
  8. Serve warm, garnished with fresh herbs. These are delicious on their own or with a dipping sauce or salad!
