Ingredients
- 2 medium zucchinis
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)
- 1/2 cup breadcrumbs (or almond flour for gluten-free)
- 2 eggs (or flax eggs for vegan)
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/2 tsp smoked paprika (optional)
- Fresh herbs (parsley or dill), chopped, for garnish
Instructions
- Wash the zucchinis, trim the ends, and grate them using a box grater.
- Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the zucchini, chopped onion, minced garlic, Parmesan, breadcrumbs, and eggs. Season with salt, pepper, and smoked paprika if using. Mix well until the mixture holds together.
- Heat olive oil in a large non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the mixture and form into patties or fritters.
- Cook the patties for about 3–4 minutes on each side or until golden brown and cooked through.
- Remove and drain on paper towels. Repeat with the remaining mixture.
- Serve warm, garnished with fresh herbs. These are delicious on their own or with a dipping sauce or salad!
