Ingredients:

  • 500g boneless, skinless chicken breast or thighs (cut into bite-sized pieces)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon red chili flakes (optional)
  • 1 teaspoon dried oregano or thyme
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon honey (optional, for slight sweetness)

Instructions:

  1. Cut the chicken into small bite-sized pieces and pat them dry with a paper towel to remove excess moisture.
  2. In a mixing bowl, combine the chicken with salt, black pepper, paprika, red chili flakes (if using), dried oregano, and half of the minced garlic. Squeeze fresh lemon juice over the mixture and toss well to coat. Let it marinate for at least 15-20 minutes to enhance the flavors.
  3. Heat a large skillet over medium-high heat and add olive oil. Once the oil is hot, add the chicken pieces in a single layer, ensuring they do not overlap. Cook for about 4-5 minutes on one side without moving them to allow a nice golden crust to form.
  4. Flip the chicken pieces and continue cooking for another 4-5 minutes until they are evenly browned and cooked through. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add butter and the remaining minced garlic. Sauté for 30 seconds until fragrant.
  6. Add the lemon zest and a teaspoon of honey (if using) to the pan and stir well.
  7. Return the cooked chicken to the skillet and toss everything together, making sure each piece is coated with the garlicky, lemony butter sauce. Cook for another 1-2 minutes.
  8. Sprinkle freshly chopped parsley over the chicken bites and give it a final toss before removing from heat.
  9. Serve immediately with a side of rice, roasted vegetables, a fresh salad, or your favorite dipping sauce.
