- 1 cup plain Greek yogurt (unsweetened, full fat or low fat)
- 4 large eggs
- 1 cup almond flour (or ½ cup coconut flour for variation)
- 1 tbsp baking powder
- ¼ tsp salt
- 1 tbsp olive oil (optional, for moisture)
- ½ tsp garlic powder or herbs (optional, for flavor)
Instructions
- Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
- Mix wet ingredients in a bowl: whisk together the eggs, Greek yogurt, and olive oil until smooth.
- Add dry ingredients: almond flour, baking powder, salt, and optional garlic powder or herbs. Stir until fully combined and a thick batter forms.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve! Great toasted or fresh with toppings like avocado, butter, or cream cheese.
