Ingredients

  • 1 cup plain Greek yogurt (unsweetened, full fat or low fat)
  • 4 large eggs
  • 1 cup almond flour (or ½ cup coconut flour for variation)
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 tbsp olive oil (optional, for moisture)
  • ½ tsp garlic powder or herbs (optional, for flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
  2. Mix wet ingredients in a bowl: whisk together the eggs, Greek yogurt, and olive oil until smooth.
  3. Add dry ingredients: almond flour, baking powder, salt, and optional garlic powder or herbs. Stir until fully combined and a thick batter forms.
  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  5. Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
