Yogurt Sponge Cake (Bizcocho de Yogur)

Ingredients

  • 1 container (125g) plain yogurt (use the container to measure other ingredients)
  • 1 container vegetable oil
  • 2 containers granulated sugar
  • 3 containers all-purpose flour
  • 3 large eggs
  • 1 packet (about 10–12g) baking powder
  • 1 tsp vanilla extract (optional)
  • Zest of 1 lemon or orange (optional for extra flavor)
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C (350°F). Grease and flour a loaf pan or round cake pan.
  2. In a mixing bowl, pour the yogurt. Use the empty yogurt container to measure and add the sugar and oil.
  3. Add eggs and whisk well until the mixture is smooth and pale.
  4. Stir in vanilla extract and lemon/orange zest, if using.
  5. In a separate bowl, mix the flour, baking powder, and salt. Gradually add this to the wet mixture, folding gently until no lumps remain.
  6. Pour the batter into the prepared cake pan. Tap the pan lightly to remove air bubbles.
  7. Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
