- For the Cake:
- 1 cup plain Greek yoghurt (full-fat works best)
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil or melted butter
- 3 large eggs, room temperature
- 1 tsp pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- Optional Toppings:
- Powdered sugar for dusting
- Fresh berries or a drizzle of honey
Instructions
- Prepare the Oven and Pan
Preheat your oven to 350°F (175°C). Grease a round 8-inch cake pan and line the bottom with parchment paper for easy removal. - Mix the Wet Ingredients
In a large bowl, whisk together the yoghurt, sugar, oil (or melted butter), eggs, and vanilla extract until smooth and well combined. - Combine Dry Ingredients
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. - Create the Batter
Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until no lumps remain. Be careful not to overmix to keep the cake light. - Bake the Cake
Pour the batter into the prepared pan and smooth the top with a spatula. Bake in the preheated oven for 30–35 minutes or until a toothpick inserted in the center comes out clean. - Cool and Decorate
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, dust with powdered sugar and garnish with berries or honey if desired. - Serve and Enjoy
Slice and serve with a cup of tea or coffee. This cake is so soft and delightful, it practically melts in your mouth!
