- 2 large cucumbers, sliced
- 3 medium tomatoes, cut into wedges
- 1 small red onion, thinly sliced
- ½ cup apple cider vinegar
- ¼ cup olive oil
- 1 tablespoon sugar (optional)

- ½ teaspoon black pepper
- ½ teaspoon dried oregano (or Italian seasoning)
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley or dill, chopped
Instructions
- In a large bowl, combine the sliced cucumbers, tomato wedges, and red onion.
- In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar (if using), salt, black pepper, oregano, and red pepper flakes.
- Pour the dressing over the vegetables and toss well to coat.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
