- 500g Pork Belly (with skin)
- 2 cups Water
- Β½ cup Soy Sauce
- ΒΌ cup Sugar (brown or white)
- ΒΌ cup Mirin (or honey + little vinegar)
- 2 tbsp Sake (optional)
- 3 cloves Garlic (crushed)
- 1-inch Ginger (sliced)
- 2 Green Onions
- 2 Boiled Eggs (optional)

- Cut pork belly into thick cubes.
- Boil pork in water for 10 minutes to remove impurities. Drain and rinse.
- In a pot, add pork, water, soy sauce, sugar, mirin, garlic, ginger, and green onions.
- Bring to boil, then reduce heat and simmer for 1.5β2 hours until tender.
- Add boiled eggs in last 30 minutes (optional).
- Let sauce thicken and coat the meat.
- Serve hot with rice.

β Use pressure cooker for faster cooking (30β35 minutes).
