Ingredients
- 1 box (1 oz) sugar-free instant vanilla pudding mix
- 1 ½ cups skim milk
- 1 container (8 oz) light whipped topping (like Cool Whip Free)
- 1 box low-fat graham crackers
- 1 container (16 oz) sugar-free chocolate frosting or 1 cup sugar-free chocolate pudding
Instructions
- In a large bowl, whisk together the instant vanilla pudding mix and skim milk until it thickens (about 2-3 minutes).
- Gently fold in the light whipped topping until well combined.
- In a 9×13-inch dish, arrange a layer of graham crackers to cover the bottom.
- Spread half of the pudding mixture over the crackers.
- Add another layer of graham crackers on top of the pudding layer, then spread the remaining pudding mixture over that.
- Top with a final layer of graham crackers.
- Warm the sugar-free chocolate frosting slightly (10-15 seconds in the microwave) to make it easier to spread, then spread it evenly over the top layer of graham crackers. (If using sugar-free chocolate pudding instead, spread it as the top layer.)
- Cover and refrigerate for at least 4 hours or overnight. This allows the graham crackers to soften and become cake-like.
