Weight Watchers Chocolate Eclair Dessert | No Bake


Ingredients

  • 1 box (1 oz) sugar-free instant vanilla pudding mix
  • 1 ½ cups skim milk
  • 1 container (8 oz) light whipped topping (like Cool Whip Free)
  • 1 box low-fat graham crackers
  • 1 container (16 oz) sugar-free chocolate frosting or 1 cup sugar-free chocolate pudding

Instructions

  1. In a large bowl, whisk together the instant vanilla pudding mix and skim milk until it thickens (about 2-3 minutes).
  2. Gently fold in the light whipped topping until well combined.
  3. In a 9×13-inch dish, arrange a layer of graham crackers to cover the bottom.
  4. Spread half of the pudding mixture over the crackers.
  5. Add another layer of graham crackers on top of the pudding layer, then spread the remaining pudding mixture over that.
  6. Top with a final layer of graham crackers.
  7. Warm the sugar-free chocolate frosting slightly (10-15 seconds in the microwave) to make it easier to spread, then spread it evenly over the top layer of graham crackers. (If using sugar-free chocolate pudding instead, spread it as the top layer.)
  8. Cover and refrigerate for at least 4 hours or overnight. This allows the graham crackers to soften and become cake-like.
