Watermelon Ice Cream

This refreshing and delicious watermelon ice cream is the perfect treat for hot summer days! Made with fresh watermelon and a few simple ingredients, this creamy dessert will satisfy your sweet cravings while keeping you cool.

Ingredients

  • 4 cups fresh watermelon, cubed and seedless
  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1 tablespoon lime juice (optional, for extra zest)
  • 1/2 cup sugar (adjust based on watermelon sweetness)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Watermelon:
Cut the watermelon into cubes, remove seeds if necessary, and blend in a food processor or blender until smooth. Strain the watermelon juice to remove any pulp for a smoother texture (optional).
  2. Mix the Ingredients:
In a large bowl, combine the watermelon juice, heavy cream, sweetened condensed milk, lime juice (if using), sugar, vanilla extract, and a pinch of salt. Stir well until all ingredients are fully mixed.
  3. Churn or Freeze:
  • If using an ice cream maker: Pour the mixture into the ice cream maker and churn according to the manufacturer’s instructions, usually about 20-30 minutes, until it reaches a thick, creamy consistency.
  • If not using an ice cream maker: Pour the mixture into a shallow container, cover it, and freeze. Every 30 minutes, stir the mixture to break up ice crystals, repeating this process for about 3 hours until it becomes smooth and creamy.
  1. Freeze and Serve:
Once the ice cream has reached the desired consistency, transfer it to an airtight container and freeze for another 2-3 hours or until fully set. Scoop and serve with your favorite toppings!

Enjoy this light and fruity watermelon ice cream!
