Walnut Flip Cake Recipe

A delicious and easy-to-make walnut flip cake, perfect for a cozy afternoon treat. This cake features a soft, buttery crumb and a crunchy walnut topping that “flips” to the bottom after baking, creating a delightful surprise.

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the Walnut Topping:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Grease and flour a 9×9 inch baking pan. You can also line it with parchment paper for easier removal.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternate Wet and Dry: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  6. Prepare Walnut Topping: In a separate bowl, combine the melted butter, brown sugar, and chopped walnuts.
  7. Assemble and Bake: Pour the cake batter into the prepared pan. Evenly spread the walnut topping over the batter.
  8. Bake: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool and Serve: Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate. The walnut topping will now be on the bottom. Cut into squares and serve warm or at room temperature.

Tips and Variations:

  • For a richer flavor, use brown butter instead of regular melted butter in the topping.
  • You can substitute pecans or other nuts for walnuts.
  • Add a sprinkle of cinnamon or nutmeg to the cake batter for extra warmth.
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream.

Enjoy your delicious Walnut Flip Cake!
