Walking Taco Casserole Recipe

This casserole combines the convenience of walking tacos with the comfort of a warm, baked dish. It’s perfect for a weeknight meal or a casual gathering.

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 (1 ounce) packet taco seasoning mix
  • 1 bag tortilla chips (about 10 ounces)

Instructions:

  1. Brown the beef: In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
  2. Add vegetables: Add the chopped onion to the skillet and cook until softened.
  3. Season: Stir in the taco seasoning packet and cook for 1 minute more.
  4. Combine ingredients: In a large bowl, combine the cooked beef mixture, black beans, corn, diced tomatoes and green chilies.
  5. Layer: Spread half of the tortilla chips in the bottom of a 9×13 inch baking dish.
  6. Top with beef mixture: Top with the beef mixture.
  7. Add sour cream and cheese: Spread the sour cream evenly over the beef mixture. Top with the remaining tortilla chips and sprinkle with the shredded cheese.
  8. Bake: Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Serve: Let the casserole stand for a few minutes before serving.
