This casserole combines the convenience of walking tacos with the comfort of a warm, baked dish. It’s perfect for a weeknight meal or a casual gathering.
Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 (1 ounce) packet taco seasoning mix
- 1 bag tortilla chips (about 10 ounces)
Instructions:
- Brown the beef: In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
- Add vegetables: Add the chopped onion to the skillet and cook until softened.
- Season: Stir in the taco seasoning packet and cook for 1 minute more.
- Combine ingredients: In a large bowl, combine the cooked beef mixture, black beans, corn, diced tomatoes and green chilies.
- Layer: Spread half of the tortilla chips in the bottom of a 9×13 inch baking dish.
- Top with beef mixture: Top with the beef mixture.
- Add sour cream and cheese: Spread the sour cream evenly over the beef mixture. Top with the remaining tortilla chips and sprinkle with the shredded cheese.
- Bake: Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve: Let the casserole stand for a few minutes before serving.
