Ingredients

  • 1 lb (450 g) ground beef or ground turkey
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel), drained
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 2 cups crushed tortilla chips
  • 1 ½ cups shredded cheddar cheese or Mexican blend cheese
  • 1 cup sour cream (optional, for topping)
  • 1 cup shredded lettuce (optional, for topping)
  • 1 cup diced tomatoes (optional, for topping)
  • ½ cup sliced black olives (optional, for topping)
  • ½ cup chopped green onions (optional, for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook Meat: In a skillet over medium heat, cook the ground beef or turkey until browned and fully cooked. Drain excess fat.
  3. Add Seasoning: Stir in the taco seasoning and a small splash of water, allowing the seasoning to coat the meat evenly.
  4. Combine Ingredients: Add the drained diced tomatoes with green chilies and beans to the skillet. Mix well and simmer for 2–3 minutes.
  5. Layer Casserole: Spread half of the crushed tortilla chips evenly at the bottom of the greased baking dish. Add the meat mixture on top, spreading it evenly. Sprinkle with shredded cheese.
  6. Bake: Place the casserole in the oven and bake for 15–20 minutes, or until the cheese is melted and bubbly.
