- 1 cup papaya cubes
- 1 cup kiwi slices
- 1 cup strawberries, halved
- 1 banana, sliced (add just before serving)

For the Honey-Lime & Chia Dressing:
- 2 tablespoons honey
- Juice of 2 limes
- 1 teaspoon lime zest
- 1 tablespoon chia seeds

- Prepare the fruit:
Wash, peel, and cut all the fruits into bite-sized pieces. Place them in a large mixing bowl. - Make the dressing:
In a small bowl, whisk together honey, lime juice, lime zest, chia seeds, and a pinch of salt. Let it sit for 5–10 minutes so the chia seeds slightly swell and thicken the dressing. - Combine and toss:
Pour the honey-lime chia dressing over the fruit. Gently toss everything together to coat the fruit evenly. - Chill and serve:
Refrigerate for 10–15 minutes to let the flavors meld. Garnish with shredded coconut and fresh mint leaves before serving.
Tip: Add the banana slices just before serving to prevent browning.
