Ingredients
- 6 large eggs
- 1 cup milk (whole or 2%)
- 1 cup cooked ham, diced
- 1 cup shredded cheese (cheddar, mozzarella, or mix)
- 1 small onion, finely chopped
- 1 bell pepper, diced (any color)
- 1 medium zucchini, grated or diced
- 1 carrot, grated
- 1 cup fresh spinach, chopped
- 2 tbsp olive oil or butter
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease or line a baking dish (8×8 or loaf pan).
- In a skillet, heat olive oil/butter and sauté onion, bell pepper, zucchini, and carrot for 3–4 minutes until slightly softened. Add spinach and cook until just wilted. Remove from heat.
- In a large bowl, whisk together eggs, milk, garlic powder, paprika, salt, and pepper.
- Stir in ham, sautéed vegetables, and half of the cheese.
- Pour mixture into prepared baking dish. Sprinkle remaining cheese on top.
- Bake for 30–35 minutes, or until the center is set and top is golden brown.
- Let cool for 5 minutes, slice, and garnish with parsley or chives.
