Veggie-Loaded Egg & Ham Bake recipe


Ingredients

  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • 1 cup cooked ham, diced
  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • 1 small onion, finely chopped
  • 1 bell pepper, diced (any color)
  • 1 medium zucchini, grated or diced
  • 1 carrot, grated
  • 1 cup fresh spinach, chopped
  • 2 tbsp olive oil or butter
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper, to taste
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a baking dish (8×8 or loaf pan).
  2. In a skillet, heat olive oil/butter and sauté onion, bell pepper, zucchini, and carrot for 3–4 minutes until slightly softened. Add spinach and cook until just wilted. Remove from heat.
  3. In a large bowl, whisk together eggs, milk, garlic powder, paprika, salt, and pepper.
  4. Stir in ham, sautéed vegetables, and half of the cheese.
  5. Pour mixture into prepared baking dish. Sprinkle remaining cheese on top.
  6. Bake for 30–35 minutes, or until the center is set and top is golden brown.
  7. Let cool for 5 minutes, slice, and garnish with parsley or chives.
