Instructions
- Prepare the Pineapple Topping:
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
- In a small saucepan over medium heat, melt the butter and brown sugar, stirring until the mixture is smooth and bubbly. Remove from heat.
- Spoon a small amount of the brown sugar mixture into the bottom of each muffin cup.
- Place a pineapple ring (or a piece if using crushed pineapple) on top of the sugar mixture in each cup. Add a maraschino cherry in the center of each pineapple ring if desired.
- Make the Cupcake Batter:
- In a medium bowl, whisk together the flour, baking powder, and salt.
