Ingredients

  • 2 cups self-raising flour
  • ½ cup sugar
  • ½ tsp salt
  • ½ cup cold butter (cubed)
  • 1 egg
  • ½ cup Ultramel custard (plus extra for brushing)
  • 1 tsp vanilla essence
  • 1–2 tbsp milk (if needed)

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, mix flour, sugar, and salt.
  3. Rub in the butter with your fingertips until the mixture resembles fine crumbs.
  4. In a separate bowl, whisk together egg, Ultramel custard, and vanilla essence.
  5. Pour wet ingredients into the dry mixture and gently mix to form a soft dough. Add a little milk if the dough is too dry.
  6. Roll out lightly on a floured surface to about 2 cm thick.
  7. Cut out scones with a round cutter and place them on the prepared tray.
  8. Brush tops with a little Ultramel custard for a golden finish.
  9. Bake for 15–20 minutes or until risen and lightly golden.
  10. Serve warm with extra Ultramel custard, cream, or jam.
