This refreshing and healthy Tzatziki Chicken Salad is a Mediterranean-inspired dish that’s perfect for lunch or a light dinner. It combines tender grilled chicken, crisp vegetables, and a tangy homemade tzatziki sauce for a meal that’s full of flavor and easy to prepare.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 2 garlic cloves, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper to taste
- 1/4 cup red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and sliced
- 2 cups mixed greens (arugula, spinach, or romaine)
Instructions:
- Prepare the chicken: Season the chicken breasts with olive oil, oregano, salt, and pepper. Grill or cook in a skillet over medium heat for 6-7 minutes per side, or until cooked through. Let the chicken rest for 5 minutes, then slice into strips.
- Make the tzatziki sauce: In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, and a pinch of salt. Stir well and refrigerate while preparing the rest of the salad.
- Assemble the salad: In a large bowl, combine the mixed greens, red onion, cherry tomatoes, and Kalamata olives. Add the sliced chicken on top.
- Dress and serve: Drizzle the tzatziki sauce over the chicken and salad, tossing lightly to combine. Adjust seasoning with salt and pepper if needed. Serve immediately and enjoy!
