Turkish Bread Recipe

This traditional Turkish bread, known as “pide,” is soft, fluffy, and perfect for serving alongside dips, soups, or grilled meats. With a golden, slightly chewy crust and airy interior, this bread is wonderfully versatile and can be enjoyed fresh or toasted the next day.


Ingredients:

  • 4 cups all-purpose flour
  • 1 ½ cups warm water (about 110°F)
  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil (plus extra for greasing)
  • 1 egg yolk (for brushing)
  • 1 tbsp sesame seeds or nigella seeds (optional)

Instructions:

  1. Activate the Yeast
    • In a small bowl, combine warm water and sugar, then sprinkle the yeast on top. Let it sit for 5–10 minutes until it becomes frothy.
  2. Make the Dough
    • In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and olive oil. Mix until the dough comes together.
    • Knead the dough on a floured surface for 8–10 minutes, until smooth and elastic.
  3. First Rise
    • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Shape the Bread
    • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • Punch down the dough and turn it out onto a floured surface. Divide it in half and shape each piece into a round or oval loaf.
    • Place the loaves on the baking sheet. Use your fingers to gently press dimples into the dough, then brush with egg yolk and sprinkle with sesame or nigella seeds.
  5. Bake the Bread
    • Bake for 20–25 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  6. Cool and Serve
    • Let the bread cool on a wire rack for a few minutes before slicing and serving. Enjoy warm!
