This traditional Turkish bread, known as “pide,” is soft, fluffy, and perfect for serving alongside dips, soups, or grilled meats. With a golden, slightly chewy crust and airy interior, this bread is wonderfully versatile and can be enjoyed fresh or toasted the next day.
Ingredients:
- 4 cups all-purpose flour
- 1 ½ cups warm water (about 110°F)
- 2 ¼ tsp (1 packet) active dry yeast
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp olive oil (plus extra for greasing)
- 1 egg yolk (for brushing)
- 1 tbsp sesame seeds or nigella seeds (optional)
Instructions:
- Activate the Yeast
- In a small bowl, combine warm water and sugar, then sprinkle the yeast on top. Let it sit for 5–10 minutes until it becomes frothy.
- Make the Dough
- In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and olive oil. Mix until the dough comes together.
- Knead the dough on a floured surface for 8–10 minutes, until smooth and elastic.
- First Rise
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Shape the Bread
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Punch down the dough and turn it out onto a floured surface. Divide it in half and shape each piece into a round or oval loaf.
- Place the loaves on the baking sheet. Use your fingers to gently press dimples into the dough, then brush with egg yolk and sprinkle with sesame or nigella seeds.
- Bake the Bread
- Bake for 20–25 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Cool and Serve
- Let the bread cool on a wire rack for a few minutes before slicing and serving. Enjoy warm!
