- 2 ¼ tsp active dry yeast (1 packet)
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp olive oil (plus extra for brushing)

Instructions
- Activate Yeast:
In a small bowl, mix warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5–10 minutes until foamy. - Make Dough:
In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil. Mix until a sticky dough forms. - Knead:
Turn the dough out onto a floured surface. Knead for about 8–10 minutes until smooth and elastic. - First Rise:
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size. - Shape:
Punch down the dough and divide it into 2–4 pieces (depending on how big you want your breads). Shape each piece into a round or oval flatbread, about ½ inch thick. - Second Rise:
Place the shaped breads on a parchment-lined baking sheet. Cover and let them rest for 15–20 minutes. - Prepare:
Preheat your oven to 450°F (230°C). If you like, brush the tops with olive oil and sprinkle with sesame or nigella seeds. Use your fingertips to make small indentations in the dough for the traditional look. - Bake:
Bake for 10–12 minutes or until golden brown and puffed. - Serve:
Brush with a little extra olive oil if desired. Serve warm with hummus, dips, or alongside your favorite meal!
