Ingredients

  • 1 box of yellow cake mix (or your favorite cake mix)
  • 1/2 cup of coconut milk (or regular milk)
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup diced mango
  • 1/2 cup diced kiwi
  • 1/2 cup diced strawberries
  • 1 tablespoon lime juice
  • 1/4 cup shredded coconut (optional, for garnish)
  • Whipped cream or frosting for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine the yellow cake mix, coconut milk, eggs, vegetable oil, and vanilla extract. Mix until smooth, either with a hand mixer or a whisk.
