Ingredients

  • 4 hard-boiled eggs
  • 2 tablespoons mayonnaise (adjust to taste)
  • Romaine lettuce or spinach leaves
  • 2 slices of cheese (cheddar, Swiss, or your choice), cut to fit egg halves
  • Seasonings of choice (salt, pepper, paprika, garlic powder, etc.)
  • Optional: 2 slices of lunch meat (turkey, ham, or chicken)
  • Toothpicks for assembling

Instructions

  1. Peel the hard-boiled eggs and cut them in half lengthwise.
  2. Spread a small amount of mayonnaise on the cut side of each egg half.
  3. Sprinkle with your favorite seasonings.
  4. On one half of each egg, place a piece of romaine or spinach, followed by a slice of cheese. If using, add a slice of lunch meat.
  5. Top with the matching egg half to form a little “sandwich.”
  6. Secure each with a toothpick.
