Ingredients
- 4 hard-boiled eggs
- 2 tablespoons mayonnaise (adjust to taste)
- Romaine lettuce or spinach leaves
- 2 slices of cheese (cheddar, Swiss, or your choice), cut to fit egg halves
- Seasonings of choice (salt, pepper, paprika, garlic powder, etc.)
- Optional: 2 slices of lunch meat (turkey, ham, or chicken)
- Toothpicks for assembling
Instructions
- Peel the hard-boiled eggs and cut them in half lengthwise.
- Spread a small amount of mayonnaise on the cut side of each egg half.
- Sprinkle with your favorite seasonings.
- On one half of each egg, place a piece of romaine or spinach, followed by a slice of cheese. If using, add a slice of lunch meat.
- Top with the matching egg half to form a little “sandwich.”
- Secure each with a toothpick.
- Serve immediately or chill for a refreshing, protein-packed snack!
