Ingredients

For the Crispy Cod:

  • Salt & black pepper to taste
  • Oil for frying

For the Golden Onion Rings:

  • 2 large onions (sliced into rings)
  • 1 cup all-purpose flour
  • 1 cup buttermilk (or regular milk)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • Oil for frying

For Serving (optional):

  • Lemon wedges
  • Tartar sauce or garlic mayo
  • Fresh parsley for garnish

Instructions

  1. Prepare Onion Rings:
    • Slice onions into ½-inch thick rings.
    • In one bowl, whisk flour, garlic powder, paprika, salt, and pepper.
    • In another bowl, pour buttermilk.
    • Dip each onion ring in flour → then buttermilk → then flour again.
    • Set aside on a tray.
  2. Prepare Cod Batter:
    • In a mixing bowl, whisk flour, baking powder, paprika, salt, and pepper.
    • Slowly whisk in cold sparkling water until smooth and slightly thick.
  3. Fry Onion Rings:
    • Heat oil (350°F/175°C).
    • Fry onion rings in batches for 2–3 minutes until golden.
    • Remove and drain on paper towels.
  4. Fry Cod:
    • Pat dry cod fillets. Dip each fillet in batter, shaking off excess.
    • Fry in hot oil for 5–7 minutes until golden brown and crispy.
