Instructions
- Prepare Onion Rings:
- Slice onions into ½-inch thick rings.
- In one bowl, whisk flour, garlic powder, paprika, salt, and pepper.
- In another bowl, pour buttermilk.
- Dip each onion ring in flour → then buttermilk → then flour again.
- Set aside on a tray.
- Prepare Cod Batter:
- In a mixing bowl, whisk flour, baking powder, paprika, salt, and pepper.
- Slowly whisk in cold sparkling water until smooth and slightly thick.
- Fry Onion Rings:
- Heat oil (350°F/175°C).
- Fry onion rings in batches for 2–3 minutes until golden.
- Remove and drain on paper towels.
- Fry Cod:
- Pat dry cod fillets. Dip each fillet in batter, shaking off excess.
- Fry in hot oil for 5–7 minutes until golden brown and crispy.
- Remove and drain on paper towels.
- Serve:
- Arrange crispy cod and onion rings on a platter.
- Garnish with lemon wedges and parsley.
