Description

Tite Ses Börek is a savory pastry loved in many cultures, known for its flaky golden crust and delicious fillings. These pastries are typically stuffed with spinach and cheese or with a flavorful meat mixture. Baked until crisp, they make a perfect snack, appetizer, or light meal.


Ingredients

For the Dough (or store-bought phyllo/filo dough):

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup warm water
  • 2 tbsp olive oil

For the Filling Options:

Spinach & Cheese Filling:

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Meat Filling:

  • 250 g ground beef or lamb
  • 1 small onion, finely chopped
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

For Assembly:

  • 1 egg, beaten (for brushing)
  • Sesame seeds (optional)

Instructions

  1. Prepare the Dough (if making from scratch):
    • Mix flour and salt in a bowl. Gradually add warm water and olive oil. Knead until smooth. Let rest for 20 minutes.
  2. Prepare the Filling:
    • Spinach & Cheese: Sauté onion in olive oil until soft, add spinach until wilted. Remove from heat and mix with feta, salt, and pepper.
    • Meat: Sauté onion in olive oil until soft. Add ground meat, paprika, salt, and pepper. Cook until meat is browned and cooked through.
  3. Assemble the Börek:
    • Preheat oven to 180°C (350°F).
    • Roll out dough thinly. Cut into squares or rectangles.
    • Place 1–2 tbsp of filling in the center of each piece. Fold over to form triangles or roll into cylinders. Seal edges with a fork or your fingers.
  4. Bake:
    • Place on a lined baking tray. Brush with beaten egg and sprinkle sesame seeds if desired.
    • Bake for 25–30 minutes or until golden brown and crisp.
  5. Serve:
    • Allow to cool slightly before serving. Enjoy warm!

Tips

  • You can freeze assembled börek before baking; just add a few extra minutes to the baking time.
  • For extra flakiness, layer phyllo sheets with melted butter instead of making your own dough.
  • Adjust fillings according to taste — mushrooms, potatoes, or herbs make great alternatives.
