Description
Tite Ses Börek is a savory pastry loved in many cultures, known for its flaky golden crust and delicious fillings. These pastries are typically stuffed with spinach and cheese or with a flavorful meat mixture. Baked until crisp, they make a perfect snack, appetizer, or light meal.
Ingredients
For the Dough (or store-bought phyllo/filo dough):
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup warm water
- 2 tbsp olive oil
For the Filling Options:
Spinach & Cheese Filling:
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Meat Filling:
- 250 g ground beef or lamb
- 1 small onion, finely chopped
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
For Assembly:
- 1 egg, beaten (for brushing)
- Sesame seeds (optional)
Instructions
- Prepare the Dough (if making from scratch):
- Mix flour and salt in a bowl. Gradually add warm water and olive oil. Knead until smooth. Let rest for 20 minutes.
- Prepare the Filling:
- Spinach & Cheese: Sauté onion in olive oil until soft, add spinach until wilted. Remove from heat and mix with feta, salt, and pepper.
- Meat: Sauté onion in olive oil until soft. Add ground meat, paprika, salt, and pepper. Cook until meat is browned and cooked through.
- Assemble the Börek:
- Preheat oven to 180°C (350°F).
- Roll out dough thinly. Cut into squares or rectangles.
- Place 1–2 tbsp of filling in the center of each piece. Fold over to form triangles or roll into cylinders. Seal edges with a fork or your fingers.
- Bake:
- Place on a lined baking tray. Brush with beaten egg and sprinkle sesame seeds if desired.
- Bake for 25–30 minutes or until golden brown and crisp.
- Serve:
- Allow to cool slightly before serving. Enjoy warm!
Tips
- You can freeze assembled börek before baking; just add a few extra minutes to the baking time.
- For extra flakiness, layer phyllo sheets with melted butter instead of making your own dough.
- Adjust fillings according to taste — mushrooms, potatoes, or herbs make great alternatives.
