This recipe for Tiramisu Pudding is a lighter and easier-to-make version of the classic Italian dessert. It combines the rich flavors of coffee, chocolate, and mascarpone cheese into a creamy and indulgent pudding.

Ingredients:

  • 1 cup strong brewed coffee, cooled
  • 1 tablespoon instant espresso powder
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/4 cup confectioners’ sugar
  • 16 ounces mascarpone cheese, softened
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 14 ladyfingers, broken into pieces
  • Unsweetened cocoa powder, for dusting

Instructions:

  1. Prepare the coffee mixture: In a large bowl, combine the cooled coffee, instant espresso powder, granulated sugar, and confectioners’ sugar. Stir until the sugars dissolve completely.
  2. Whisk the mascarpone and heavy cream: In a separate bowl, beat the mascarpone cheese until smooth. Gradually add the heavy cream and continue beating until stiff peaks form.
  3. Combine the mixtures: Gently fold the coffee mixture into the mascarpone mixture until well combined.
  4. Assemble the pudding: In individual serving glasses, layer the broken ladyfingers and the coffee mixture. Repeat the layers until the glasses are filled.
  5. Top with the mascarpone mixture: Spoon the remaining mascarpone mixture over the top of each pudding.
  6. Dust with cocoa powder: Dust the top of each pudding with unsweetened cocoa powder.
  7. Chill and serve: Refrigerate the puddings for at least 2 hours, or overnight, to allow the flavors to meld. Serve chilled.
