Tiramisu Pudding Cups

Ingredients

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • 1 cup heavy cream
  • 2 tbsp sugar
  • 1 cup mascarpone cheese
  • 2 cups coffee or espresso, cooled
  • 1 package ladyfingers
  • 2 tbsp cocoa powder, for dusting
  • 2 tbsp chocolate shavings (optional)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Pudding:
    • In a bowl, whisk together the instant vanilla pudding mix and cold milk until thickened, about 2 minutes.
    • In a separate bowl, beat the heavy cream and sugar together until stiff peaks form, then gently fold in the mascarpone cheese and vanilla extract.
  2. Assemble the Pudding Cups:
    • Quickly dip the ladyfingers into the cooled coffee (don’t soak them too long, just a quick dip).
    • Layer the bottom of each cup with a layer of dipped ladyfingers.
    • Add a spoonful of the prepared vanilla pudding mixture over the ladyfingers.
    • Repeat the layers until the cups are filled, finishing with a layer of pudding on top.
  3. Chill:
    • Refrigerate the pudding cups for at least 2 hours, or preferably overnight, to let the flavors meld together.
  4. Serve:
    • Before serving, dust the top of each cup with cocoa powder and garnish with chocolate shavings, if desired.
