Ingredients
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy cream
- 2 tbsp sugar
- 1 cup mascarpone cheese
- 2 cups coffee or espresso, cooled
- 1 package ladyfingers
- 2 tbsp cocoa powder, for dusting
- 2 tbsp chocolate shavings (optional)
- 1 tsp vanilla extract
Instructions
- Prepare the Pudding:
- In a bowl, whisk together the instant vanilla pudding mix and cold milk until thickened, about 2 minutes.
- In a separate bowl, beat the heavy cream and sugar together until stiff peaks form, then gently fold in the mascarpone cheese and vanilla extract.
- Assemble the Pudding Cups:
- Quickly dip the ladyfingers into the cooled coffee (don’t soak them too long, just a quick dip).
- Layer the bottom of each cup with a layer of dipped ladyfingers.
- Add a spoonful of the prepared vanilla pudding mixture over the ladyfingers.
- Repeat the layers until the cups are filled, finishing with a layer of pudding on top.
- Chill:
- Refrigerate the pudding cups for at least 2 hours, or preferably overnight, to let the flavors meld together.
- Serve:
- Before serving, dust the top of each cup with cocoa powder and garnish with chocolate shavings, if desired.
