Tiramisu is an Italian coffee-flavored dessert. It’s made with ladyfingers dipped in coffee, layered with a creamy mascarpone cheese mixture, and often topped with cocoa powder.
Ingredients:
- For the Ladyfingers:
- 2 large eggs, separated
- 1/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- For the Coffee Syrup:
- 1 cup strong brewed coffee
- 1/4 cup sugar
- 1 tablespoon brandy or rum (optional)
- For the Mascarpone Cream:
- 1 pound mascarpone cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, separated
- 1 teaspoon vanilla extract
- For Garnish:
- Unsweetened cocoa powder
Instructions:
- Make the Ladyfingers:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat egg whites with an electric mixer until stiff peaks form.
- In a separate bowl, whisk together egg yolks and sugar until light and fluffy.
- Gently fold egg yolks into egg whites until combined.
- In a small bowl, whisk together flour and salt.
- Gently fold flour mixture into egg mixture until just combined.
- Pipe or spoon batter into 2-inch long mounds onto prepared baking sheets.
- Bake for 8-10 minutes, or until golden brown.
- Let cool completely on baking sheets.
- Make the Coffee Syrup:
- In a small saucepan, combine coffee, sugar, and brandy (if using).
- Bring to a simmer over medium heat, stirring occasionally, until sugar dissolves.
- Remove from heat and let cool completely.
- Make the Mascarpone Cream:
- In a large bowl, beat egg yolks with an electric mixer until light and fluffy.
- Gradually add sugar, beating until thick and pale.
- Beat in mascarpone cheese until smooth.
- In a separate bowl, beat egg whites with an electric mixer until stiff peaks form.
- Gently fold egg whites into mascarpone mixture until combined.
- Stir in vanilla extract.
- Assemble the Tiramisu:
- Place half of the ladyfingers in the bottom of a glass baking dish, dipping each one briefly in the coffee syrup.
- Spread half of the mascarpone cream over the ladyfingers.
- Repeat layers with remaining ladyfingers and mascarpone cream.
- Cover and refrigerate for at least 4 hours, or preferably overnight.
- Serve:
- Before serving, dust the top of the tiramisu with cocoa powder.
- Cut into squares and enjoy!
