Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, chopped
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1 cup salsa (mild or spicy to taste)
- 2 cups shredded cheddar cheese
- 1 bag (about 5–6 cups) tortilla chips, slightly crushed
- Optional toppings: sour cream, green onions, jalapeños, fresh cilantro
Instructions
- Preheat oven to 350°F (175°C).
- Cook ground beef and chopped onion in a large skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning to the meat, stir in ½ cup water, and simmer for 2–3 minutes.
- Stir in black beans, corn, diced tomatoes, and salsa. Let simmer for another 5 minutes.
- In a 9×13 baking dish, spread a layer of crushed tortilla chips.
- Pour the beef mixture over the chips and spread evenly.
- Sprinkle shredded cheese over the top.
- Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
- Let rest for 5 minutes before serving. Top with your favorite toppings.
Tip: You can make it ahead and refrigerate before baking. Add 10 extra minutes to the bake time if chilled.
