Throw-Together Mexican Casserole

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, chopped
  • 1 packet taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 cup salsa (mild or spicy to taste)
  • 2 cups shredded cheddar cheese
  • 1 bag (about 5–6 cups) tortilla chips, slightly crushed
  • Optional toppings: sour cream, green onions, jalapeños, fresh cilantro

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook ground beef and chopped onion in a large skillet over medium heat until browned. Drain excess fat.
  3. Add taco seasoning to the meat, stir in ½ cup water, and simmer for 2–3 minutes.
  4. Stir in black beans, corn, diced tomatoes, and salsa. Let simmer for another 5 minutes.
  5. In a 9×13 baking dish, spread a layer of crushed tortilla chips.
  6. Pour the beef mixture over the chips and spread evenly.
  7. Sprinkle shredded cheese over the top.
  8. Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
  9. Let rest for 5 minutes before serving. Top with your favorite toppings.

Tip: You can make it ahead and refrigerate before baking. Add 10 extra minutes to the bake time if chilled.
