INGREDIENTS

  • 2 large cucumbers (sliced or smashed)
  • 1 tbsp soy sauce
  • 1 tbsp vinegar (rice vinegar preferred)
  • 1 tsp sesame oil
  • 1–2 cloves garlic (minced)
  • 1 tsp chili flakes (adjust to taste)
  • 1/2 tsp sugar or honey (optional)
  • Salt to taste
  • 1 tsp sesame seeds
  • Fresh coriander or green onions (for garnish)

INSTRUCTIONS

  1. Wash and slice or lightly smash the cucumbers for better flavor absorption.
  2. Sprinkle a little salt and let them sit for 5–10 minutes, then drain excess water.
  3. In a bowl, mix soy sauce, vinegar, sesame oil, garlic, chili flakes, and sugar.
  4. Add cucumbers to the mixture and toss well to coat evenly.
  5. Let it sit for 5–10 minutes to absorb the flavors.
  6. Garnish with sesame seeds and fresh herbs.
  7. Serve immediately or chill for a more refreshing taste.

TIPS

  • Use chilled cucumbers for extra crunch and freshness.
  • Smash cucumbers instead of slicing for a more authentic texture.
  • Adjust spice level by increasing or reducing chili flakes.
  • Add a splash of lemon juice for extra tanginess.
  • For more flavor, let it marinate longer in the fridge.
