Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon (if using).
- In another bowl, beat eggs, then stir in melted butter, vanilla, and crushed pineapple (including the juice).
- Add wet mixture into the dry ingredients and mix until just combined. Do not overmix.
- Fold in nuts or coconut if desired.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let bread cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
