This Pineapple Quick Bread recipe only lasted 30 mins in my house!


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 (20 oz) can crushed pineapple with juice
  • ½ cup unsalted butter, melted (or vegetable oil)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (optional)
  • ½ cup chopped nuts or shredded coconut (optional, for texture)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon (if using).
  3. In another bowl, beat eggs, then stir in melted butter, vanilla, and crushed pineapple (including the juice).
  4. Add wet mixture into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in nuts or coconut if desired.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let bread cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice, serve, and enjoy—warning: it disappears fast! 😋
