This Pineapple Quick Bread Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup crushed pineapple (with juice)
  • ½ cup vegetable oil (or melted butter)
  • ½ cup sour cream or plain yogurt
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (optional – pecans or walnuts)
  • ½ cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, then stir in the crushed pineapple (with juice), oil, sour cream, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir gently until just combined. If using, fold in nuts and coconut.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
