- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- 1 cup crushed pineapple (with juice)
- ½ cup vegetable oil (or melted butter)
- ½ cup sour cream or plain yogurt
- 1 tsp vanilla extract
- ½ cup chopped nuts (optional – pecans or walnuts)
- ½ cup shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs, then stir in the crushed pineapple (with juice), oil, sour cream, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir gently until just combined. If using, fold in nuts and coconut.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
