- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream or plain Greek yogurt
- 1 ½ cups fresh peaches, peeled and chopped (about 2 medium peaches)
- Optional: ½ cup chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla and sour cream. Mix until combined.
- Gradually add the dry ingredients into the wet mixture, mixing until just combined—do not overmix.
- Gently fold in the chopped peaches (and nuts if using).
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
