Ingredients
- 1 ripe banana, mashed
- 1/2 cup old-fashioned rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup plain Greek yogurt (optional, for creaminess)
- 1 tablespoon chia seeds (optional, for thickness)
- 1–2 teaspoons honey or maple syrup (to taste)
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg (optional)
- 2 tablespoons chopped walnuts or pecans
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a jar or airtight container, mash the ripe banana until mostly smooth.
- Add the oats, milk, Greek yogurt, chia seeds (if using), honey or maple syrup, cinnamon, nutmeg, vanilla, and a pinch of salt. Stir until well combined.
- Stir in half of the chopped nuts.
- Cover the jar with a lid and refrigerate overnight (or at least 4 hours).
- In the morning, give the oats a good stir. Add a splash of milk if you’d like a thinner texture.
- Top with the remaining chopped nuts and extra banana slices if desired.
- Enjoy cold or warm it up in the microwave for about 30–60 seconds.
