These Banana Nut Bread Overnight Oats Are a Great Addition to Your Breakfast

Ingredients

  • 1 ripe banana, mashed
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup plain Greek yogurt (optional, for creaminess)
  • 1 tablespoon chia seeds (optional, for thickness)
  • 1–2 teaspoons honey or maple syrup (to taste)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 2 tablespoons chopped walnuts or pecans
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a jar or airtight container, mash the ripe banana until mostly smooth.
  2. Add the oats, milk, Greek yogurt, chia seeds (if using), honey or maple syrup, cinnamon, nutmeg, vanilla, and a pinch of salt. Stir until well combined.
  3. Stir in half of the chopped nuts.
  4. Cover the jar with a lid and refrigerate overnight (or at least 4 hours).
  5. In the morning, give the oats a good stir. Add a splash of milk if you’d like a thinner texture.
  6. Top with the remaining chopped nuts and extra banana slices if desired.
  7. Enjoy cold or warm it up in the microwave for about 30–60 seconds.
