The Trick to Making Delicious Crispy Chips Without a Drop of Oil & Vinegar

Ingredients

  • 2 large potatoes (or sweet potatoes)
  • 2–3 tbsp vinegar (white, apple cider, or malt – for flavor & crisping)
  • Salt to taste
  • Optional: black pepper, chili powder, garlic powder, or your favorite seasonings

Instructions

  1. Preheat your oven to 200°C (400°F) or prepare your air fryer.
  2. Wash and peel the potatoes. Slice them very thinly using a sharp knife or mandolin.
  3. Soak the slices in cold water with 2–3 tablespoons of vinegar for 10–15 minutes to help remove starch and give extra crispness.
  4. Drain and pat the slices completely dry with a clean towel.
  5. Arrange the slices in a single layer on a lined baking tray or air fryer basket.
  6. Sprinkle salt and any desired spices over the slices.
  7. Bake or air fry for 15–20 minutes, flipping halfway through, until golden and crispy.
  8. Let them cool slightly – they’ll crisp up even more as they cool.
