Ingredients
- 2 cups cherry tomatoes, halved
- 1 large cucumber, sliced or diced
- 1/2 small red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped (optional)
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar or lemon juice
- Salt and freshly ground black pepper, to taste
Instructions
- In a large bowl, combine the cherry tomatoes, cucumber, and red onion.
- Drizzle with olive oil and red wine vinegar (or lemon juice).
- Toss gently to coat all the vegetables evenly.
- Add crumbled feta cheese and chopped parsley.
- Season with salt and pepper to taste.
- Toss one more time lightly and serve immediately, or chill for 15–30 minutes to let the flavors blend.
Tip:
For extra flavor, add a pinch of oregano or a few Kalamata olives!
