Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, sliced or diced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the cherry tomatoes, cucumber, and red onion.
  2. Drizzle with olive oil and red wine vinegar (or lemon juice).
  3. Toss gently to coat all the vegetables evenly.
  4. Add crumbled feta cheese and chopped parsley.
  5. Season with salt and pepper to taste.
  6. Toss one more time lightly and serve immediately, or chill for 15–30 minutes to let the flavors blend.

Tip:
For extra flavor, add a pinch of oregano or a few Kalamata olives!
