The Strawberry Roll Cake


A light, fluffy sponge cake rolled with sweet strawberry filling and whipped cream, perfect for any occasion! This delightful dessert is as beautiful as it is delicious.


Ingredients

For the Sponge Cake:

  • 4 large eggs (room temperature)
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp milk (room temperature)

For the Filling:

  • 1 cup fresh strawberries, finely chopped
  • 2 tbsp granulated sugar
  • 1 cup heavy whipping cream (chilled)
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

  • Fresh strawberries
  • Powdered sugar

Instructions

  1. Prepare the Sponge Cake:
    a. Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
    b. In a large bowl, beat the eggs and sugar with an electric mixer until pale and fluffy (about 5 minutes). Add vanilla extract and mix well.
    c. Sift together flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture in three parts, alternating with milk. Mix just until combined.
    d. Pour the batter evenly into the prepared pan and spread it out gently. Bake for 10–12 minutes or until the top springs back when lightly touched.
  2. Roll the Cake:
    a. While the cake is still hot, carefully invert it onto a clean kitchen towel dusted with powdered sugar.
    b. Gently peel off the parchment paper. Starting at the shorter side, roll the cake (with the towel) into a log shape. Let it cool completely.
  3. Prepare the Filling:
    a. Toss the chopped strawberries with 2 tbsp granulated sugar and set aside for 10 minutes.
    b. In a chilled bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold in the macerated strawberries.
  4. Assemble the Roll:
    a. Unroll the cooled cake and spread the strawberry cream filling evenly over the surface, leaving a 1-inch border.
    b. Roll the cake back up tightly (without the towel) and transfer it to a serving plate.
  5. Chill and Serve:
    a. Refrigerate the roll for at least 1 hour before slicing to set the filling.
    b. Dust with powdered sugar and garnish with fresh strawberries before serving.
