- 1 whole egg
- 400 ml milk
- 100 g sugar
- 2 tbsp all-purpose flour
- 1 tsp vanilla extract
- Lemon zest (optional)
- Cinnamon (optional, for flavor or dusting)
👩🍳 INSTRUCTIONS
- Prepare the Pastry
Roll the puff pastry into a log, slice into small discs, and press each piece into a muffin tin to form tart shells. - Make the Custard Base
In a bowl, mix flour with a little milk to avoid lumps. Heat remaining milk with sugar until warm. - Combine Ingredients
Add egg yolks, whole egg, vanilla, and optional lemon zest. Mix well until smooth. - Fill the Shells
Pour the custard mixture into each pastry shell, filling about ¾ full. - Bake
Bake at 220°C (428°F) for 15–20 minutes until the tops are caramelized and slightly blistered. - Cool Slightly & Serve
Let them cool for a few minutes, then serve warm.
💡 TIPS
- Bake at high temperature for that classic burnt caramelized top.
- Don’t overfill the shells—custard expands while baking.
- Use cold puff pastry for extra flakiness.
- Sprinkle cinnamon or powdered sugar before serving for authentic flavor.
- Best enjoyed fresh and warm for maximum taste!
