INGREDENT
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, melted (or vegetable oil)
- 1 cup granulated sugar
- 2 large eggs (room temperature)
- 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)
- 2 tsp pure vanilla extract
- 1 cup add-ins of choice (blueberries, chocolate chips, nuts, etc.)
Instructions
- Preheat oven to 425°F (220°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat together melted butter (or oil), sugar, and eggs until smooth and fluffy.
- Stir in the buttermilk and vanilla.
- Gently fold the wet ingredients into the dry ingredients. Do not overmix—just combine until you no longer see streaks of flour. Batter should be thick.
- Fold in your add-ins (berries, chocolate chips, etc.).
- Divide the batter evenly between muffin cups, filling them almost to the top for tall muffins.
- Bake at 425°F (220°C) for 5 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring to a wire rack.
