Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, melted and slightly cooled
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 cup buttermilk (or plain yogurt)
- 1 teaspoon pure vanilla extract
- Optional: 1–1½ cups add-ins (fresh blueberries, chocolate chips, chopped nuts, etc.)
- Coarse sugar for sprinkling (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, whisk the melted butter and sugar until well combined. Add the eggs one at a time, whisking well after each. Stir in the buttermilk and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined — do not overmix! Gently fold in your chosen add-ins if using.
- Divide the batter evenly among the muffin cups, filling each cup to the top for nice tall muffins. Sprinkle with coarse sugar if you like.
- Bake for 5 minutes at 425°F, then reduce the oven temperature to 350°F (175°C) and bake for an additional 15–18 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
