The most loved cake in Italy

Ingredients

  • 3 large eggs
  • 1 cup (200 g) granulated sugar
  • ½ cup (120 ml) vegetable oil (or melted butter)
  • 1 cup (240 ml) milk
  • 2 cups (250 g) all-purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional, very Italian touch!)
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large bowl, beat the eggs and sugar with a whisk or mixer until pale and fluffy.
  3. Add in the oil (or melted butter), milk, vanilla, and lemon zest. Mix well.
  4. In another bowl, sift together the flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until smooth and lump-free.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool slightly, then dust generously with powdered sugar before serving.

✨ Soft, fluffy, and lightly sweet — this is a true Italian classic (often called Torta Paradiso) that pairs perfectly with coffee or tea.

Would you like me to also add a cream filling version (like Italians sometimes do with custard or mascarpone cream) to make it even richer?
