Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

- Add in the oil (or melted butter), milk, vanilla, and lemon zest. Mix well.
- In another bowl, sift together the flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until smooth and lump-free.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool slightly, then dust generously with powdered sugar before serving.
