Ingredients
- 2 large chicken breasts, finely chopped
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 3 tablespoons all-purpose flour (or almond flour for low carb)
- 2 tablespoons mayonnaise or sour cream
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley (optional)
- Salt and black pepper, to taste
- 2–3 tablespoons vegetable oil, for frying
Instructions
- In a large bowl, combine chopped chicken, mozzarella, Parmesan, eggs, flour, mayonnaise, garlic, parsley, salt, and pepper. Mix well until everything is evenly combined.
- Heat oil in a large non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the mixture and drop into the hot skillet, flattening slightly with a spatula to form fritters.
- Cook for 3–4 minutes per side, or until golden brown and the chicken is cooked through.
- Remove to a paper towel-lined plate to drain any excess oil.
- Serve warm with your favorite dipping sauce or a fresh salad.
