2 large eggs
- 1/2 cup (100g) sugar
- 1/2 cup (120ml) vegetable oil
- 1 cup (240ml) freshly squeezed orange juice
- Zest of 1 orange
- 1 1/2 cups (180g) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
- Powdered sugar (for dusting, optional)
Instructions
- Preheat oven to 180°C (350°F). Grease and flour a cake pan or line it with parchment paper.
- In a large bowl, whisk together the eggs and sugar until light and creamy.
- Add the oil, orange juice, orange zest, and vanilla extract. Mix well until combined.
- In a separate bowl, sift together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring just until smooth. Don’t overmix.
- Pour the batter into the prepared cake pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool, then dust with powdered sugar before serving.
