2 large eggs

  • 1/2 cup (120ml) vegetable oil
  • 1 cup (240ml) freshly squeezed orange juice
  • Zest of 1 orange
  • 1 1/2 cups (180g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat oven to 180°C (350°F). Grease and flour a cake pan or line it with parchment paper.
  2. In a large bowl, whisk together the eggs and sugar until light and creamy.
