Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil (or melted butter)
- 2 large eggs
- 1 tsp vanilla extract
- Optional: 1 cup chocolate chips, blueberries, or nuts
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, mix all dry ingredients together.
- Add milk, oil, eggs, and vanilla. Stir until just combined (don’t overmix).
- Gently fold in your choice of add-ins (chocolate chips, berries, etc.).
- Divide batter evenly into muffin cups.
- Bake for 18–20 minutes, or until a toothpick comes out clean.
- Let cool slightly, then enjoy warm!
