The Delight of Pineapple Nut Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt.
  3. Add eggs, vanilla, and the entire can of crushed pineapple with its juice. Stir until well mixed.
  4. Fold in chopped nuts.
  5. Pour batter into the prepared pan and spread evenly.
  6. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan before serving. Optional: top with cream cheese frosting or a dusting of powdered sugar for extra sweetness.
