The Best Ever Scotcheroos

Ingredients

  • 1 cup sugar
  • 1 cup corn syrup
  • 1 cup peanut butter (creamy or chunky)
  • 6 cups Rice Krispies cereal
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. In a large saucepan, combine the sugar and corn syrup. Heat over medium heat, stirring occasionally, until the mixture comes to a boil. Let it boil for about 1 minute.
  2. Remove the saucepan from heat and stir in the peanut butter until it’s fully melted and combined.
  3. Add the Rice Krispies cereal to the mixture and stir until the cereal is fully coated.
  4. Press the cereal mixture evenly into a greased 9×13-inch baking pan.
  5. In a microwave-safe bowl, combine the chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring after each, until the chips are melted and smooth.
  6. Pour the melted chocolate mixture over the Rice Krispies layer in the pan, spreading it evenly.
  7. Let the scotcheroos cool completely at room temperature before cutting into squares.
