Tennessee Onions, a Rich and Cheesy Southern Side

Ingredients

  • 2–3 large sweet onions (like Vidalia), sliced into thick rings
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme (optional)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare onions: Peel and slice the onions into thick ¼–½ inch rings. Separate the rings and layer them in a greased 9×13-inch baking dish.
  3. Season: Drizzle melted butter over the onions. Sprinkle with garlic powder, salt, pepper, and thyme if using.
  4. Add cheese: Evenly top with mozzarella, cheddar, and Parmesan.
  5. Bake: Cover with foil and bake for 25 minutes. Then remove foil and bake another 15–20 minutes until the cheese is golden and bubbly.
  6. Serve: Let cool slightly, garnish with fresh parsley if desired, and serve warm.
