Ingredients
- 2 large onions, sliced into rings
- 1 cup buttermilk
- 1 1/2 cups all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
- 1/4 cup cornmeal
- Vegetable oil for frying
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Onions:
- Peel and slice the onions into thick rings. Separate the rings carefully.
- Soak the Onions:
- Place the onion rings in a bowl and cover with buttermilk. Let them soak for at least 30 minutes. This helps tenderize the onions and ensures the batter sticks.
- Prepare the Breading:
- In a separate bowl, combine the flour, garlic powder, smoked paprika, salt, pepper, cayenne pepper (if using), and cornmeal. Stir until well combined.
- Coat the Onion Rings:
- Remove the onion rings from the buttermilk, allowing any excess liquid to drip off. Dredge each ring in the seasoned flour mixture, making sure it’s well-coated. For extra crispy rings, dip them back into the buttermilk and coat a second time in the flour mixture.
- Fry the Onion Rings:
- Heat vegetable oil in a deep skillet or frying pan over medium-high heat (about 350°F or 175°C). Carefully add the coated onion rings to the hot oil in batches, frying them for 2-3 minutes or until golden brown and crispy.
- Remove the onion rings with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
- Serve:
- Garnish with fresh parsley, if desired. Serve hot as a delicious side dish, appetizer, or snack.
