Ingredients
- 1 (32 oz) bag frozen tater tots
- 1 lb breakfast sausage (or bacon/ham)
- 1 medium onion, diced (optional)
- 1 cup shredded cheddar cheese
- 6 large eggs
- ¾ cup milk
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional toppings: chopped green onions, hot sauce, sour cream
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain excess grease. Add diced onion and cook until softened (if using).
- Spread the frozen tater tots evenly in the bottom of the prepared baking dish.
- Top the tater tots with the cooked sausage and onion mixture. Sprinkle shredded cheese evenly over the top.
- In a medium bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
- Pour the egg mixture evenly over the casserole.
- Bake in the preheated oven for 40–45 minutes, or until the eggs are set and the top is golden brown.
- Let cool for a few minutes before slicing. Add optional toppings as desired.
