Tater Tot Casserole Breakfast

Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 1 lb breakfast sausage (or bacon/ham)
  • 1 medium onion, diced (optional)
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • ¾ cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional toppings: chopped green onions, hot sauce, sour cream

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain excess grease. Add diced onion and cook until softened (if using).
  3. Spread the frozen tater tots evenly in the bottom of the prepared baking dish.
  4. Top the tater tots with the cooked sausage and onion mixture. Sprinkle shredded cheese evenly over the top.
  5. In a medium bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
  6. Pour the egg mixture evenly over the casserole.
  7. Bake in the preheated oven for 40–45 minutes, or until the eggs are set and the top is golden brown.
  8. Let cool for a few minutes before slicing. Add optional toppings as desired.
