Tater Tot Casserole Breakfast

Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 1 lb breakfast sausage (or bacon, cooked and crumbled)
  • 1 small onion, diced (optional)
  • 1 ½ cups shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • Cooking spray or butter for greasing

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess grease. If using onion, add and sauté until softened.
  3. Assemble Casserole: Spread the cooked sausage evenly in the bottom of the baking dish. Sprinkle half of the shredded cheese over the sausage.
  4. Add Tater Tots: Arrange frozen tater tots in a single layer on top of the sausage and cheese.
  5. Mix Eggs: In a bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  6. Pour: Pour the egg mixture evenly over the tater tots. Top with the remaining shredded cheese.
  7. Bake: Bake uncovered for 40–45 minutes, or until the eggs are set and the top is golden and bubbly.
