Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 1 lb breakfast sausage (or bacon), cooked and crumbled
  • 6 large eggs
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup mozzarella cheese (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Layer Tater Tots: Spread the frozen tater tots evenly in the greased baking dish.
  3. Add Meat & Cheese: Sprinkle the cooked sausage or bacon over the tater tots. Then, top with shredded cheddar and mozzarella cheese.
  4. Prepare Egg Mixture: In a mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, onion powder, and paprika.
  5. Pour Over Casserole: Evenly pour the egg mixture over the tater tots and sausage.
  6. Bake: Bake uncovered for 40-45 minutes, or until the eggs are set and the top is golden brown.
